After my overwhelming success with the crockpot last week, I decided to venture out onto another limb of the old skool foodery tree: a casserole!

Don't ask me why I choose a casserole.  I think I was swayed by the pretty pictures in the Cooking Light feed item on Crowd Pleasing Casseroles in a moment of sudden hunger induced weakness.  I printed several of the recipes since they all looked so tasty and comforting (can you say PMS??? who looks for comfort food who isn't sick or pms'ing?). 

I settled on a Chicken Cordon Bleu recipe that had Stove Top stuffing mix in it!  That shit is like crack to carb loader!

For obvious reason I don't keep Stove Top in my house so I had to make a trip to the store.  I was browsing the Publix web site - I must have been REALLY hungry at this point - and I found this really cool feature on the Publix website.  Apparently you can view the weekly ad and select items and create a grocery list from it!  I've never been one to care about the weekly grocery ad until my husband kept coming home with 2 or 4 packages of Ritz crackers and 24 pounds of pasta at a time.  Then I realized things could be "buy 1 get 1 free" and it was all over.

And now there's this, where all I have to do click, add, and print and I now know I MUST buy 4 packages of taco shells this week!  IT'S AWESOME!

So I get everything I need to make this Chicken Cordon Bleu (chicken breasts were on sale too!) casserole and I'm on my way to being an old skool kitchen queen.

It was easy, fast and simple to clean up.  There was only a baking dish and a skillet to clean up (which is great because I usually dirty EVERY DAMN DISH in the kitchen when I cook).  AND there was extra for the dogs so I didn't have to trek to the garage to fill up their dog food dish!  Happiness all around!

I think I'd make it again, but I would add some green beans to the dish.  BTW I used fresh mushrooms instead of the canned ones because that's what I had.

In fact I think I liked making this one-dish meal so much, I'm going to try it again.  Only this time I'm looking for an Italian type thing...Any suggestions?
